I now believe in gluten-free bread again

I like bread. After buying multiple loaves of not-very-good bread per week for years, Robyn and I bought a bread machine. We used that machine until it wore out, then bought a better one and started wearing it out. Then I was diagnosed with celiac disease, and could not eat wheat any more.

I tried many kinds of "gluten free bread", and found them all disappointing. There was some nice savory cake, but no bread. Pizza crusts were like crackers or worse (imagine graham cracker crust when you are expecting pastry crust in a pie). I gave up on the idea of good gluten free bread.

This year's trip to Italy has made me a believer again. They have gluten free bread there that tastes like bread. Real bread. White, light, fluffy, bread. Bread that, when you feed it to a non-celiac, doesn't make the person ask "what is this stuff?". Bread that smells, feels and tastes just like bread.
